For this month's Daring Cooks challenge, we were lucky enough to visit thai cuisine, and there was no restrictions as far as the choice of meat was concerned, or any substitute for that matter. I meant to cook chicken, but I've thought long and hard about it and I was looking at my barbecue, all covered in snow and I was at a loss as to how to cook the skewers I intended to make. The oven didn't seem too tempting, and the casserole just didn't cut it.

That's when it struck me: how about some briskets? Wouldn't it be wonderful? So I adapted the marinade, removing the yogurt, because this would tend to curdle. And here's how to cook the best thai briskets: you can go the way of the slow cooker for about 8 to 10 hours, or you can go the way of the oven as I did, for 6 to 8 hours at 275°F.

As far as the final dish, I went the way of simplicity: lettuce on the bottom, almond sauce on the top. It was fantastic!

As you might already know, I am allergic to peanuts, which is why I used almond butter in the sauce. Was the taste similar to peanut satay sauce? Those that tasted it thought so. There was even somebody who did not belive me about the almond butter. So I'd say the adaptation was a success.

Many thanks to Cuppy for this challenge, it was a feast. For the original recipe, you'll have to visit her blog: Cuppylicious
