Daring Bakers: Chocolate and Frangelico Cannoli - Cannoli au Chocolat et au Frangelico

The time has come to reveal November's Daring Bakers' Challenge. Roll the drums: Cannoli! Since I've got some italian blood in me, this is one dessert that has no secret for me. But I'll readily admit this: I tend to shy away from fried dishes in general. However, I was not gonna miss this challenge, since it's Lisa Michele of the Parsley, Sage, Desserts and Line Drives blog who suggested this challenge. I love this woman: she has a wonderful blog, dry wits and skill to spare.

Not wanting to stay in my comfort zone, I'd decided to try something without the frying part. It was... daring. And there were three miserable failures. It was bad enough that I did not want to document it with pictures. I'm keeping that for myself! Let's just say that the crunchy shells with beautiful bubbles so typical of this pastry were not quite the result that I got. So in the end I had to get the oil out and brave the deep fryer. I guess it was right on the money too, since the shells turned out perfect. As for the filling, I went for a mix of chocolate and Frangelico.

C'est déjà le moment de vous révéler le défi des Daring Bakers du mois de novembre 2009. Roulement de tambour: Cannoli! Ayant un peu de sang italien, voilà un dessert qui n'a pas de secret pour moi. Mais, j'avoue que je n'en prépare jamais parce que je ne suis pas vraiment portée vers la friture. Mais je ne pouvais pas manqué ce défi, car c'est Lisa Michele du blog Parsley, Sage, Desserts and Line Drives

Dans le but de sortir de ma zone de confort, j'avais décidé d'essayer une version sans friture. C'est avec une certaine angoisse que je me suis lancée. J'ai essayé trois fois plutôt qu'une. Échec total! J'ai tellement honte, que je vous épargne les photos de mon échec. On était bien loin des cannoli avec les magnifiques bulles si caractéristiques de cette pâtisserie que que j'aime tant... J'ai dû me relever mes manches et affronter la friteuse. Je ne le regrette pas, car les ils sont parfaits. Pour ce qui est de la garniture, j'ai fait une garniture au chocolat et au Frangelico.

Chocolate Cannoli Filling


500 g (1 lbs - 2 cups) ricotta cheesse
80 g (3/4 cup) confectioner’s sugar, sifted
60 g (1/4 cup) cacao, sifted
30 ml (2 tbsp) Frangelico - optional


Line a strainer with cheesecloth.
Place the ricotta in the strainer over a bowl and cover with plastic wrap.
Weight in down with a heavy can, and let the ricotta drain overnight.
In a bowl with electric mixer, beat ricotta until smooth.
Add the confectioner’s sugar, the cacao and the Frangelico and blend until smooth.
Chill until firm.
When your ready to serve fill a pastry bag fitted with a plain or star tip, or a ziploc bag, with the ricotta.
If using a ziploc bag cut of the corner.
Insert the tip in the Cannoli shell and squeeze gently until the shell is half filled.
Turn the shell and fill the other side.

Garniture au Chocolat et au Frangelico


500 g (2 tasses) de fromage ricotta
80 g (3/4 tasse) de sucre à glacer, tamiser
60 g (1/4 tasse) de cacao, tamiser
30 ml (2 cuil. à table) de Frangelico - facultatif


Tapisser un tamis avec un coton à fromage.
Déposer le fromage ricotta et couvrir avec une pellicule plastique.
Égoutter toute une nuit au réfrigérateur.
À l’aide d’un batteur à mains, battre le fromage jusqu’à ce qu’il soit onctueux.
Ajouter le sucre à glacer et le Frangelico.
Bien mélanger et refroidir au moins deux heures avant d’utiliser.
Lorsque vous êtes prêt à servir, installer une douille dans un sac à pâtisserie ou un sac ziploc. Si vous utilisez un sac ziploc, couper un coin.
Remplir votre sac à pâtisserie du mélange chocolaté et dresser vos coquilles de cannoli un côté à la fois.
Servir immédiatement.
Donne 12 cannoli.
